Creamy  Vegetable Korma

Ingredients (for 3-4 servings)

2 Cup mixed vegetables, such as carrots, cauliflower, potato, chopped

1 cup frozenfresh peas
1 tbsp oil
1 onion, finely chopped
3 cardamom pods, bashed
1 tsp cumin powder

1 tsp coriander powder
½ tsp turmeric
powder

½ tsp chilli powder

½ tsp garam masala
1 green chilli, finely chopped
2-3 garlic clove, crushed
1 inch piece ginger, finely chopped
100ml fresh yogurt
2 tbsp almonds
paste

Salt as per taste

Method (How to make vegetable kurma)
Heat the oil in a large pan. Cook onion with the dry spices over a low heat for 5-6 mins until the onion is light golden. Add the chilli, garlic and ginger and cook for 1 min, then
add mixed vegetables and peas cook for a further 5 mins.
Add 1 cup water and salt, simmer for 10 mins. Cook till vegetables are tender

Remove from the heat and stir through the yogurt and ground almonds. SprinkledFresh chopped coriander and garam masala and mix well.

Serve hot with basmati rice or naan
