DabeliMumbai Street Food

 Ingredients

 Masalafor the dabeli

 2 tsp coriander seeds

 1 small stick of cinnamon

 4-5 cloves

 1 black cardamom

 3-4 whole red chilly

 1 tsp cumin/jeera

 Heat a pan and roast the red chili, cumin, cloves, cinnamon and coriander seeds, Put all the ingredients in a dry grinder and grind to a fine paste. Keep aside

 

For Tamarind chutney

 1 cups of deseeded dates

 2 tbls tamarind paste

 1/4 cup sugar

 1 tsp chilli powder

 1 tsp cumin powder

 Salt to taste

Heat 4 cups of water in a deep pan and add dates and tamarind and boil for 30-40 minuts

 Cool the mixture and puree into a smooth paste in a blender. Strain to remove any residues, add salt chilli powder and sugar and boil few minuts.

 For the red chutney

 4-5 whole red chilies

 1/2 cup garlic (peeled)

 1 tbls vinegar or lemon juice

 1/2 tsp salt

 Soak red chillies in warm water for 30 minuts and grind the soaked red chilies, garlic, vinegar or lemon juice and salt to a smooth paste.

 For dabeli potato filling

 3 - 4 boiled potato(peeled and mashed)

 1 medium onion (finely chopped)

 2 tsp dabeli masala

 2 pinch of asafoetida/hing

 1/2 tsp cumin seed

 1/2 cup fresh grated coconut

 1/4 cup fresh pomegranate seeds

 2 tbsp chopped coriander leaves

 2 tbsp oil

 2 tbsp tamarind dates chutney

 Salt to taste

 How to make stuffing

 Heat oil in a pan add cumin seed, asafoetida and then add chopped onion and fry for few minuts or till they become soft.   Add sweet chatney and mashed potatoes and mix well. Now add salt and 2 tsp dabeli masala in it and cook for 2-3 minutes. Remove from the heat and mix pomegranate seeds, coriander and grated coconut and mix well. Make 5-6 tikki from filling and keep aside.

 Other ingredients for Serving

 5-6 pav or burgar buns, sliced and lightly roasted in both side with using butter or ghee.

 1/2 cup roasted masala peanuts

 2 tbls finally chopped coriander leaves

 1/2 cup finally chopped onion

 1/2 cup small sev

 1/2 cup fresh pomegranate seeds

 Red chutney as required

 Sweet tamarind chutney

 

Method for Serving (How to Serve Dabeli)

 Now take one roasted bun slice and apply red chutney on one side of slice. and now take one more slice of bun and apply tamarind chutney.

 Now put one potato filling on the top of bun slice, add chopped onion, corender leaves, and pomegranate seeds.

 Now add some masala peanut, sev and sprinkle some dabeli masala over it and cover with other slice. Make all dabeli and serve immedietly
